Simple Italian Chicken Bake
◦1 lb. chicken breasts (I used boneless/skinless, but you could use the bone-in)
◦1 large ripe tomato, cut into chunks
◦1 medium to large green pepper, sliced
◦1 medium to large red pepper, sliced
◦1 medium to large onion, sliced and separated into rings
◦aged balsamic vinegar, to taste
◦nsa Italian Seasoning, to taste
Place chicken breasts in baking dish or pan. Drizzle with balsamic vinegar. Place tomato pieces in the corners of the dish. Cover chicken with pepper and onion slices. Sprinkle with Italian seasoning.
Bake at 400 degrees for 20-30 min (I cooked the chicken from frozen, so thawed might take less time...just peek at the chicken until there is no longer any pink juice - but don't overbake as you won't want the chicken to dry out).
I had mine with zucchini (grilled on the oven rack while the chicken was cooking) and sliced mushrooms, with baked potato slices as a carb, but the side dish possibilities are endless.
