Asian Style Balsamic Chicken
◦6 to 8 skinless, boneless chicken breasts, uncooked and diced
◦3 to 4 cloves of garlic, finely minced
◦4 green onions, thinly sliced
◦2 tablespoons Splenda
◦½ teaspoon black pepper
◦4 tablespoons balsamic vinegar
◦pineapple, to taste, optional (fresh or canned unsweetened in its own juice)
Mix all ingredients together and allow to marinate for at least an hour. Simmer in a non-stick skillet until chicken is tender and liquid is mostly absorbed. Be careful not to overcook, because then it becomes too dry which can happen very easily!
Additions: Pineapple is very good added to this - however, not everyone is allowed this fruit. If you do add this, add it at the very last minute, just to warm it through. I serve this over rice or mix the rice in last minute as well - kind of like a stir fry.
