Chicken Cacciatore

◦1 lb chicken breasts

◦2 cups sliced mushrooms

◦2 cups chopped bell peppers

◦¾ cup chopped onion

◦3 garlic cloves, minced

◦1-16 oz can nsa whole tomatoes, undrained and coarsely chopped

◦¾ cup tomato juice **(Note: An on-plan alternative might be to use nsa tomato sauce thinned with an equal portion of water)

◦½ cup water

◦¼ cup tomato paste

◦1 tablespoon sugar substitute

◦2 teaspoons dried rosemary

◦1 teaspoon dried basil

◦1 teaspoon dried oregano leaves

◦¼ teaspoon black pepper

◦cooked rice or rice noodles

Spray a large nonstick skillet or Dutch oven with cooking spray;** heat over medium heat until hot. Cook chicken 3-4 minutes or until browned on all sides.

Add mushrooms, bell peppers, onion, and garlic to pan; cook and stir 3-4 minutes. Add remaining ingredients (except rice or noodles) to pan; heat to a boil. Reduce heat to low and simmer, uncovered, about 30 minutes or until chicken is no longer pink in center. Serve over rice or rice noodles
