Chicken Cacciatore

◦1 large onion, thinly sliced

◦1 1/2 lbs skinless, boneless chicken breasts

◦2 6 oz cans of nsa tomato paste

◦8 oz mushrooms, sliced

◦1/4 tsp pepper

◦2 cloves garlic, minced

◦1 tsp oregano

◦1/2 tsp basil

◦1/4 cup white wine (not cooking wine!)

◦1/4 cup water

Put sliced onion in bottom of crock-pot. Add chicken breasts. Stir together tomato paste, mushrooms, pepper, garlic, herbs, wine and water. Spread over chicken. Cover and cook on low 7-9 hours or high for 3-4 hours.

Several individual servings can be frozen and reheated in the microwave as needed without becoming tough by doing the following:

After cooked, separate sauce, onion slices and chicken breasts. It's fairly easy as the sauce stays thick instead of getting soupy. Lay out several appropriate sized pieces of wax paper for wrapping each breast individually. Place some onion slices on a piece of wax paper. Place a piece of chicken breast on the onions. Top with a scoop of sauce, wrap up and place in a freezer-safe container. Repeat process until done!
