Chicken Stroganoff

◦1 onion, sliced or diced

◦1-2 garlic cloves, crushed (or 1 teaspoon minced)

◦3 skinless chicken breasts, cut into strips

◦2 level tablespoons nsa tomato paste

◦1 level tablespoon paprika

◦1½ cups nsa chicken broth

◦3 cups sliced mushrooms

Sauté onion and garlic until onion softens. You can use a little broth, or start them on low until onions start to sweat then turn the heat up.

Add chicken and cook until lightly brown. Add paprika and tomato paste and stir until chicken is coated. Add the broth/stock and then the mushrooms. Bring to a boil and let simmer for about 15 minutes or until sauce is thickened.
