Hawaiian Chicken
◦6 large skinless boneless chicken breasts
◦4 large red bell peppers
◦2 large sweet Maui onions (BMOS Note: Other sweet onions you may substitute include Vidalia, Walla Walla, Sweet Imperial, Texas Spring Sweet, Texas 1015Y, Carzalia Sweet, Oso Sweet, Arizona and Granex.)
◦16 oz can unsweetened pineapple chucks in its own juice (or 2 cups fresh pineapple plus ½ cup water)
Cut the chicken in bite-sized pieces. Cut onion and peppers into about 1 inch squares. Put all ingredients in crockpot and cook on Low setting all day long. Serve with rice.
