Crockpot Swiss Steak
◦1½ lbs round steak, trimmed of fat, cut in serving pieces
◦1 lb bag baby carrots
◦1-1/2 lbs new potatoes, scrubbed, cut into quarters
◦1 medium onion, sliced
◦1 can nsa beef broth
◦1 can nsa diced tomatoes
◦nsa Italian seasoning, to taste
◦garlic powder, to taste
◦pepper, to taste
Place potatoes, then carrots into crockpot. In pan over high heat, brown meat well on both sides. Place on top of carrots. Sauté onions in any pan drippings for 1 minute, then add some of the beef broth to deglaze the pan. Pour this over the meat. In a bowl, mix the remaining broth and the tomatoes. Add seasonings as desired. Pour over all. Cover crockpot and cook on low for 9 hours or high for 6 hours.
