Crockpot Chicken with Vegetables
◦4 skinless boneless chicken breasts, cut in strips
◦1-2 bags on-plan frozen vegetables of your choice (Note: Limiting your of frozen vegetables to those on the list of Free Veggies would allow you to enjoy this recipe at any meal in which protein is allowed.)
◦1 cup nsa chicken broth or water
◦pepper, to taste
◦garlic, to taste - fresh is great
◦onion - if you have it
◦any other nsa spices you like
Put chicken strips in bottom of crockpot. Layer frozen vegetables on top of chicken. Pour chicken broth on top, cover and cook for about 8 hours. Chicken will boil in broth and vegetables will steam. Do not use more than 1 cup of broth or your vegetables will be soggy.
