Tuna Patties
Note: Because each serving contains only about a tablespoon of carb, please be sure to augment your carb portions accordingly.
◦3 - 6 oz cans nsa tuna
◦2-3 egg whites
◦1/4 cup onions, finely chopped
◦1/4 cup green pepper, finely chopped
◦1 tablespoon parsley flakes
◦1 tablespoon lemon juice
◦1/2-1 tsp garlic powder
◦1/2 tsp freshly ground black pepper, or to taste
◦1/4 cup ground, raw oatmeal
Drain tuna until fairly dry. Place into a medium sized bowl and flake the tuna chunks. Add all other ingredients and mix well by hand. Form into patties. Heat a non-stick skillet over med-high heat. Brown patties until lightly browned and heated through.
