Diced Potatoes and Chicken
◦4-5 potatoes
◦white wine
◦2 large skinless boneless chicken breasts
◦garlic, to taste
◦pepper, to taste
◦rosemary, to taste
◦paprika, to taste
◦basil, to taste
Parboil potatoes (Note: Parboiling is partially cooking the potatoes. In this case, try about 6 - 7 minutes.) and dice. Line an 8 inch square baking pan with foil. Place potatoes in pan, pour in a little white wine then sprinkle with spices. Rub spices on chicken breasts and place on top of potatoes. Add more wine and seal with foil. Bake at 350° about an hour or until potatoes are tender. When cooked, portion 2 oz chicken with ½ cup potatoes for ready made meals.
