OP Cucumber and Tomato Salad
◦2 cucumbers, peeled and thinly sliced
◦½ red onion thinly sliced - then quarter the slices
◦½ white or other sweet onion thinly sliced - then quarter the slices
◦2 tomatoes, diced
◦freshly ground pepper, to taste
◦¼ cup balsamic vinegar
◦¼ cup red wine vinegar - we use a Merlot vinegar by Sutter Home that is wonderful!
Combine veggies in large, non-metal bowl. Mix. Add vinegar & pepper and toss to coat. This is even better the second or third day! I can't seem to keep it in the house!
