Chicken Sauce Piquante

◦4 skinless, boneless chicken breasts

◦1/2 tsp dried oregano

◦freshly ground pepper, to taste

◦nsa chicken broth, for sauteing, approx 1/4 cup

◦3 cloves garlic, minced

◦1/3 cup red wine vinegar

◦1 large tomato, seeds removed, coarsely chopped

◦1/2 cup water

◦1 Tbsp chives, chopped

◦1 Tbsp parsley, chopped

Heat non-stick skillet on medium high heat, add chicken. Don't crowd the skillet. Sprinkle chicken with oregano and pepper. Saute about 4 minutes on each side, re-seasoning when turning. Transfer chicken to covered casserole and keep in warm oven.

Add chicken broth to skillet and when sizzling, add garlic. cook about 30 seconds, being careful not to burn. Add vinegar, bring to a strong boil and reduce until almost all liquid is evaporated. (Yes, it's normal to have a strong smell; no it's not going to taste that way. Wait and see!) Add tomato and water and bring to boil. simmer gently 5 minutes. Season with pepper to taste. Add chicken to skillet and cook just long enough to heat through. Serve, sprinkled with herbs.
