Vegetable Quiche Cups to Go

◦1 10 oz. package of nsa frozen spinach

◦3/4 cup egg whites (or 6 egg whites)

◦1/4 cup diced green peppers

◦1/4 cup diced onions

◦3 drops hot-pepper sauce** or red pepper flakes (ARC Gail Note: To keep this 100 percent on plan, another option is to use the on plan hot sauce recipe fround in the Condiments Section of this forum).

Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid. Line a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.** (ARC Gail Note: Kitchen parchment would provide a more plan friendly option, using the method described in my link.) Combine egg whites with peppers and onions and spinach in bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees for 20 minutes or until knife inserted in center comes out clean. Quiche cups can be frozen and reheated in microwave. Any combination of appropriate vegetables can be used.
