Spinach Fritters

Note: When determining your portion, please note that it will likely be necessary for you to augment your carb portion when enjoying this recipe. Also bear in mind that oats double in volume when conventionally prepared and we take our measurements off the cooked volume, thus the ¼ cup uncooked oats will equal ½ cup cooked.

◦10 oz package nsa frozen chopped spinach, thawed

◦1 cup chopped onions

◦1 cup chopped mushrooms

◦¼ teaspoon garlic, minced

◦½ teaspoon pepper

◦3-4 egg whites

◦¼ cup ground oats, made by processing oatmeal in food processor or blender

Mix together spinach, onions, mushrooms, garlic and pepper and place in a drainer over a bowl with 2 paper towels folded and a small plate to drain the excess fluid. This takes a few hours. Discard the excess fluid, place the spinach mixture in a bowl, add egg whites and ground oats to hold it together. Cook these like pancakes in a skillet, flipping to cook each side. Eat as is, or top with tomato sauce that has been blended with pepper and garlic or spaghetti sauce.
