Marinated Mushrooms

◦10 oz package fresh, whole, crimini mushrooms, cleaned (anywhere from 8 - 16 oz should work)
◦½ cup red wine (Note: Please be sure the wine you use is for table use rather than for cooking. Cooking wines are loaded with sodium and not recommended for plan use.)

◦½ cup red wine vinegar

Place whole mushrooms in heavy skillet. Cook, covered, over medium heat for 5 minutes, shaking pan occasionally. Add the wine and toss to coat. When pan is nearly dry, add the vinegar, tossing to coat. Remove from heat and allow to cool. Can be served at room temperature. Store in refrigerator.
