Fresh Bruschetta
◦12 Roma (plum) tomatoes, chopped
◦1 tablespoon minced garlic
◦2 tablespoons minced shallots
◦1 cup chopped fresh basil leaves
◦1 teaspoon fresh lemon juice
Mix all ingredients together cover and put in the fridge for at least 1hour (I like to leave it overnight) to allow the flavors to blend.
You can use as a potato topper, mixed with rice, on top of rice pasta, as a salad dressing, on top of eggs, as a veggie dip. Or just eat it alone. (yummy)
Sometimes I add sundried tomatoes for a little sweetness or roasted red bell peppers. Obviously you can't use oil packed, but it should still work if you do dry packed sundried tomatoes and just soak them in water for 10-15 minutes-- or fresh roasted peppers.
