Quickie Turkey Meal

Note: This recipe came from a cookbook called Busy People's Low-Fat Cookbook. It looks a lot like a hamburger helper meal, and takes less than 30 minutes to make. I modified it to work with the 6WBMO. Hope you all like it!

◦1 lb ground turkey breast

◦3 1/2 cups nsa beef broth

◦1 14.5 oz can nsa diced tomatoes

◦4 oz sliced mushrooms

◦1 1/2 cups uncooked rice

◦1 tbsp diced onion

◦2 tsp garlic, minced

◦1 tbsp Italian seasoning

◦pepper to taste

Cook turkey and a little of the broth in a non-stick skillet over medium heat until fully cooked. Remove turkey. Add remaining broth, tomatoes, mushrooms and spices. Bring to a boil. Add rice, stir well. Reduce heat to a low boil, cover and cook 10 minutes. Crumble cooked turkey into tiny pieces. Stir into rice mixture. Cook another 5 minutes. Turn heat off, cover. Let sit for 2-3 minutes before serving.
