Emeril's Spicy Turkey Sausage

◦2½ lbs ground turkey breast meat

◦½ cup chopped garlic

◦2 tablespoons chopped fresh parsley

◦4 tablespoons paprika

◦2 teaspoons cayenne

◦2 teaspoons ground cumin

◦1 teaspoon crushed red pepper

◦1 teaspoon dried oregano

◦1 teaspoon dried thyme

◦1 teaspoon fresh ground black pepper

◦2 teaspoons onion powder

◦1/2 teaspoon garlic powder

Mix all spices together in a small bowl. Add garlic and mix well. Place ground turkey in a large bowl. Add spice mixture and knead into turkey until well mixed (this will take up to 5 minutes). Divide turkey into 18 equal pieces, rolling into balls. Using an indoor grill, place balls on the grill about 2 inches apart. Flatten the balls with the grill lid as you close it. Grill patties until cooked thoroughly, about 6-8 minutes, depending on thickness. These freeze well. Makes eighteen 2 ounce patties.
