Chicken and Rice Soup

◦4 cups nsa chicken broth (it's best to make your own)

◦2 medium carrots, thinly sliced

◦1 large onion, diced

◦1 stalk of celery, thinly sliced

◦1 cup uncooked white rice

◦1 lb chicken breast

◦2 tablespoons black pepper to taste

◦3 cups of water

In a small pot, bring 3 cups of water and the chicken to a boil. When chicken is completely cooked, set it aside, take a fork and shred it into small pieces. In a separate pot, add chicken broth, onion, carrots, celery and rice. Bring it to a boil. Once it is at a boil, bring the heat down to a simmer. Simmer until the vegetables are soft and the rice is completely cooked. Add pepper and chicken. Cook for 5 minutes more.
