Seafood Gumbo

Note: The use of ground oat flour may cause one to lose slowly, or for progress to stop. Please read ingredient link for more information.

◦1 medium onion, chopped

◦1 cup nsa vegetable broth

◦1 stalk celery, chopped

◦1 bay leaf

◦4 cod (or whatever kind of fish you like) fillets, cut into bite-sized pieces

◦1 lb shrimp, peeled and deveined

◦½ cup oat flour made by grinding oatmeal in blender or food processing

◦2 cups water

◦freshly ground black pepper

In a large pan, sauté onion, celery, and bay leaf in the vegetable broth.

In a non-stick frying pan, slowly brown the flour, being careful not to burn it. It may take as long as 10 minutes to get it brown. Don't rush it. When the flour is brown, add 2 cups of cold water (this will be thick). Add to onion.

In the frying pan, sear the fish and shrimp (if the shrimp is uncooked). Add fish and shrimp to the flour/onion mixture. Add additional water if needed. Serve over rice if desired
