Shrimp and Sausage Jambalaya

◦10 oz lean ground turkey breast

◦3 cloves garlic, crushed

◦½ teaspoon black pepper

◦¼ teaspoon cayenne pepper

◦¼ teaspoon mace (optional) (Note: Though you may not be familiar with it, mace is similar to nutmeg but slightly more bitter, and should be available in the spice section of most markets.)

◦¼ teaspoon allspice

◦1 teaspoon thyme

◦½ teaspoon paprika

◦½ teaspoon sage

◦1 small onion, chopped

◦1 green pepper, diced

◦2 cloves garlic, crushed

◦2½ cups uncooked rice

◦1 - 2 (14½ oz) cans diced nsa tomatoes (depends on how much you like tomatoes)

◦1 (8 oz) can nsa tomato sauce

◦2 cups water

◦½ teaspoon thyme

◦¼ teaspoon ground red pepper flakes (or more if you like it spicy)

◦3 bay leaves

◦40 small cooked shrimp (size 51/60) (Note: If you're buying them fresh, that's roughly 10 - 12 oz.)

Combine ground turkey with next 8 ingredients (spices), mixing until well combined. In a 4 quart pot over medium high heat, cook turkey mixture until browned. Stir in onion, green pepper and garlic. Cook, stirring occasionally until tender. Add rice, cook until rice grains are opaque, stirring frequently.

Add diced tomatoes, tomato sauce, water, thyme, ground red pepper flakes and bay leaves. Over high heat, heat to boiling. Reduce heat to low, cover and cook, stirring occasionally, until rice is tender, about 25 minutes (you may need to add more water). Discard bay leaves. Add cooked shrimp, cook for 5 minutes more.
