Shrimp Hotpot

◦1 medium onion, chopped

◦3 teaspoons minced garlic

◦1 teaspoon sugar substitute, optional

◦½ teaspoon crushed red pepper

◦¼ teaspoon black pepper

◦¼ cup chopped fresh parsley

◦2 (14 oz) cans nsa chopped tomatoes in juice

◦1 lb shrimp, cleaned

Sauté onions in water or broth for 5 minutes. Stir in parsley, garlic, red pepper, tomatoes, sugar substitute, and pepper. Reduce heat, simmer 20-30 minutes, till sauce thickens. Stir in shrimp; cook until done, about 5 minutes.

Serving Idea: Serve over rice pasta.
