Chicken Chow Mein

◦16 oz skinless chicken breast, cut into cubes or strips

◦1/2 cup water

◦1 medium onion, chopped

◦2 medium celery stalks, cut on the bias into 1/2 inch chunks

◦3 Tbsp low sodium soy sauce**

◦2 cloves garlic, minced

◦1 Tbsp Splenda (baking, flaky kind)

◦1 5-oz can of nsa bamboo shoots, drained

◦1 6-oz can of nsa water chestnuts, drained

◦1 cup fresh bean sprouts

◦1/2 cup snow peas, trimmed

◦4 green onions, finely shredded

◦2 cups (raw, not cooked) brown rice prepared separately according to package directions

In crock pot, combine chicken, water, onion, celery. Cover; cook on low 6-8 hours, or high 3-4 hours. In a small bowl, whisk together soy sauce (or eliminate to make it more plan friendly) garlic and Splenda. Add this and bamboo shoots, water chestnuts, bean sprouts and snowpeas to the crock and turn to high. After one hour, add green onions and mix thoroughly. Serve over prepared brown rice.
