Mushroom Gravy
Note: This recipe has been a life saver! It's all free foods and tastes great over turkey, chicken, or mashed potatoes! Really it can be used anywhere you would use regular gravy! My whole family loves this gravy even the picky eaters!
◦2 1/3 cups nsa vegetable broth
◦5 ounces mushrooms, sliced
◦2½ tablespoons arrowroot powder
Combine 1/3 cup broth and mushrooms in a heavy nonstick skillet over medium heat. Sauté mushrooms 7-8 minutes or until they begin to turn brown and liquid has almost evaporated. Remove from heat and set aside.
Combine ¼ cup broth, half the sautéed mushrooms (you can put them all in if you want a smooth gravy instead), and the arrowroot in a jar with a tight fitting lid. Shake vigorously. Combine with remaining stock in a heavy saucepan over high heat. Bring to a boil. Reduce heat to medium and simmer 15 minutes, whisking frequently, until mixture begins to thicken.Add the rest of the sautéed mushrooms and simmer until just heated throughout. Season with pepper to taste.
