Breakfast in a Cup
◦6 egg whites
◦6 oz. on-plan turkey sausage, in small chunks (for recipes, see the card which came with your kit or check Breakfast Recipe Index, this forum)
◦3 cups shredded uncooked potatoes
◦½ cup chopped onions
◦garlic or garlic powder, to taste
◦pepper, to taste
Prepare turkey sausage per recipe. Brown potatoes in non stick pan with onions and spices. Mix eggs, sausage, and potatoes and dish into 6 nonstick muffin cups. Bake at 350º for 20 minutes or until liquid is solid.
If you are a body type that does not allow carbs for breakfast, omit the potatoes and add in any free veggies you like. These freeze very well and can be on hand to grab and go. Just heat up in microwave.
Note: You can double this recipe and bake it in a 9" x 12" pan then cut it into 12 squares. Each "muffin" or square is one serving for a female of average height (2 oz protein, ½ cup carb.)
