Breakfast Rice Pudding
◦2 egg whites
◦½ teaspoon vanilla
◦2 dashes cinnamon
◦½ cup cooked rice
◦1 packet Splenda
◦additional cinnamon for topping
Put two egg whites in a microwaveable bowl, add vanilla, cinnamon, and cooked rice. Microwave for 20 seconds. Stir and place in microwave for 30 seconds more. Sprinkle additional cinnamon on top, stir and serve.
