Yam and Red Pepper Burgers

Note: This recipe is intended for our Vegetarian members, using legumes as the protein source. Measure out 1 cup for females, 2 cups for males. Other members may use this recipe if at goal and Living Lean.

◦8 oz yam, peeled and cut into chunks

◦14 oz can nsa chickpeas, drained

◦2 red peppers, peeled

◦2-3 cloves garlic, minced

◦1 Tbsp fresh cilantro, chopped

◦1/4 cup ground oat flour

Roast red peppers, cored and seeded, over open fire or on grill, when charred pop them into a plastic bag and rub, the charred skin should come off easily. Cook the yam 15-20 minutes, or until tender, drain well and place in food processor along with all the other ingredients except for oat flour. Pulse to blend together. Shape into 4-6 equal sized burgers then coat in the oat flour and let chill for 1 hour. Fry in heavy, non-stick pan or grill for 5-6 minutes each side.
