Squash Cakes
◦2 cups raw yellow squash, or zucchini, grated
◦1 Tbsp onion, grated
◦2 egg whites
Beat egg whites until light and fluffy; mix with grated squash and onion.Drop large tablespoonfuls of squash mixture into heated non-stick pan. Cook on each side until brown.
