Cabbage Soup

◦1 large, sweet onion

◦2 cloves of garlic, minced

◦1/4 cup balsamic vinegar

◦2 Tbsp brown SugarTwin

◦8 cups finely sliced red cabbage

◦1 can nsa diced tomatoes

◦6 cups nsa chicken broth

◦1/8 tsp black pepper

◦1 tsp crushed red pepper flakes (if you don't like spicy, you may omit this)

In a large non-stick pot over medium heat, cook onions until translucent. Add the garlic and cook stirring for 1 minute. Stir in vinegar and sugar twin, bring to a simmer. Add cabbage and stir well to combine. Add pepper, tomatoes and chicken broth, bring to a simmer. Continue cooking at the simmer uncovered for 30-40 minutes. Taste soup and adjust the seasonings with vinegar, sugar twin and pepper adding more if desired.
