Rice Balls

◦3 cups cooked medium grain white rice (still hot)

◦2 tablespoons unseasoned rice vinegar

◦1 packet Splenda

Mix rice vinegar and Splenda together until Splenda is dissolved. Sprinkle vinegar mixture over hot rice. Using a cutting motion, mix in the vinegar mixture into the rice, fan the rice to cool it and continue mixing until rice is almost room temperature. Separate rice into 6 equal portions. Slightly dampen hands with water so rice will not stick to hands. Use your hands to form 1/6 of rice into a triangle. This is a great portable rice dish. It tastes like the rice used for sushi, and it is great room temperature. Feel free to play with the amounts of vinegar and Splenda, adjusting to your preference
