Sweet Potato Cake
◦1/2 cup yam, grated
◦1 tsp vanilla
◦1/2 tsp cinnamon, more or less to taste
◦dash of nutmeg
◦dash of pumpkin pie spice
◦2 egg whites
◦1 packet Splenda
Put all ingredients right into the food processor. Process until very smooth. Pour into microwave safe bowl, cereal size. cover with paper plate to prevent any splatter. Cook for 5 minutes. Insert a toothpick to test, pick should come out clean.
