Pork Chop and Rice Dinner
◦3-4 pieces of lean trimmed pork
◦¼ cup chopped onion
◦¼ cup chopped bell pepper
◦1½ cups nsa canned diced tomatoes, with juice
◦½ cup uncooked rice
◦¼ teaspoon dry mustard powder
◦1/8 teaspoon pepper
Brown pork on both sides. Remove from pan, drain fat. Sauté onion and pepper. Add tomato, rice, and spices. Place pork on top of rice mixture. Cover, simmer 30 minutes or until rice and chops are tender.
