Cajun Cabbage

◦1 lb lean ground beef (or plan-friendly meat of your choice) made into 1 oz meatballs

◦2 large tomatoes, peeled, seeded and diced

◦1 medium onion, diced

◦2 garlic cloves, minced

◦1 small chile pepper, seeded and minced (Note: Always wear gloves when handling chiles and be sure to keep your hands away from your eyes!)

◦spices of your choice such as black pepper, cayenne, paprika

◦1 small head of cabbage, chopped

◦1 cup water

Brown meatballs and onions with garlic then add to crockpot with rest of ingredients. Cook on low setting 6-8 hours. Serve over rice or rice noodles, if desired.
